Tip: The batter will be very thick. A thick batter makes a crispier waffle.
Berry compote
2 teaspoons cornstarch
1 tablespoon water
2 10oz packages frozen mixed berries (4 cups thawed with their juices)
1 cup granulated sugar
1/4 teaspoon allspice
1/4 teaspoon ground cinnamon
Grated zest of 1 lemon
Dissolve cornstarch in the water. Set aside. Combine the berries, their juices, sugar, lemon zest all spice and cinnamon, in saucepan and bring to boil. When bubbles appear on the side of the pan (just before it reaches full boil) quickly stir in the cornstarch mixture. Let the fruit boil for only one minute to cook the cornstarch. Overcooking will make the fruit disintegrate. Remove from heat. Compote will thicken further as it cools.
Crème Fraiche whipped cream
1/2 cup crème fraiche or sour cream
3 tablespoons granulated sugar
1 cup cold heavy cream
In a bowl, whisk the crème fraiche with sugar until smooth. In a separate bowl whip the cream. Gently fold together.

Restaurants in Camden, Maine

One of my favourite restaurants in Camden - 'Ephemere' at 51 Bayview street Camden ( tel 207 236 4451) recently had a well deserved double page write-up in Aug issue of Down East magazine. The menu has something for everyone - the food is fabulous!( my favorite is the smoked haddock on a bed of mashed potatoes)
There is also a lovely Wine Bar upstairs, where you can enjoy a glass of wine and sample their 'Lighter fare' menu. A definite must in Camden!

Cellardoor Vineyard, Lincolnville, Maine

Just a few miles outside Camden is the Cellardoor Vineyard. It is open daily from 10 to 5.
The barn, which was built in 1790, has been recently renovated and now offers an expanded tasting bar, loft seating area, and a wine & gift shop. Make sure you sample their unique blueberry Wine, which is 100% Blueberry. It is great with blue cheese and toasted walnuts. We attended a recent wine tasting, and sampled some delightful wine ( and came home with a few bottles , too!) This is definitely well worth a visit.

Scuba diving in Maine
Terry finally got in his first dive of the season. Beauchamp point, Rockport Maine, a few miles from Blue Harbor House. Good visibility as the water was still pretty cold... Checking out Natures larder(!)...he spotted some lobsters and a crab. Not quite the Carribean for a dive location, (dry suit required, and not many colorful fish) but very similar to diving in Scotland!

Belted Galloways in Mid Coast Maine!
Belted Galloway cattle, originally from Scotland, are quite a landmark in Rockport, Maine! The famous black and white 'Oreo Cookie' cows at Aldermere farm are now one of the area's popular attractions.
Aldermere Farm , owned and managed by Maine Coast Heritage Trust, is a traditional New England saltwater farm, with rugged fields, weathered stone walls, a rocky shoreline, and simple yet elegant structures. The farm’s 136 acres include fields, woods, and wetlands, as well as the buildings and grounds. Enjoy a beautiful walk from Blue Harbor House to see the 'Belties' or take the car and enjoy the scenery on the way.

Camden Wedding
There are several wonderful wedding venues in Camden. One of my favourites is the Vesper Hill Children's chapel.
The Vesper Hill Children's Chapel is a beautiful outdoor Chapel, in Rockport, less than 2 miles from Blue Harbor House. It sits high on a ledge, the focal point of mature, well-tended gardens, with climbing hydrangea over the stone wall of the foundation, and willows, pines, birches and much much more. They also have great herb garden in the grounds. It is a very peaceful, beautiful and serene place, a lovely place to visit any day of the year, though most popular for weddings during the summer.

Maiden's Cliff, Camden
Take a hike up one of the many trails in Camden Hills State park. The views are incredible.
The 5,500 acre park provides 30 miles of hiking trails along the shore and in the Megunticook Mountain range, whose peaks rise from near sea level to a height of 1,380 feet. One outstanding feature of this range is Maiden Cliff, a rock outcropping that rises 800 feet from the shore of Megunticook Lake and offers hikers outstanding views from the top. Take a look at these absolutely stunning views. Breathtaking!

Spring has sprung a surprise!
Well, Blue Harbor House looks pretty as a picture, but definitely not your typical spring day!
Camden is not well known for it's ski slopes,( but on a day like today skiing comes to mind!)however the Snow Bowl is quite unlike anything else in the East.
From the summit of 1300' Ragged Mountain, home to the Snow Bowl's trails, skiers and riders have an incredible view of the Atlantic Ocean. The Camden Snow Bowl really is "where the mountains meet the sea".
Although now closed for the season, the Camden Snow Bowl is the place to look for good, affordable skiing for all levels. Look forward to next season......
